Bacon-Wrapped Shrimp with Chili-Lime Glaze

Ingredients
- 12 Large shrimp, peeled & deveined
- 6 slices Bacon, halved
- 1 tbsp Great Lakes Gold High Oleic Vegetable Oil
- 1 tbsp Honey
- 1 tbsp Fresh lime juice
- 1 tsp Lime zest
- 1/2 tsp Chili flakes (or chipotle powder for a smokey heat)
- Salt & pepper to taste
- Optional: cilantro microgreens or lime wedges for garnish
Instructions
- In a skillet, add a small amount of Great Lakes Gold High Oleic Vegetable Oil to evenly distribute heat and prevent sticking. Cook bacon over medium heat until it begins to crisp but remains flexible. Drain on paper towels.
- Wipe out the skillet and add fresh Great Lakes Gold High Oleic Vegetable Oil. Heat to medium-high. Season shrimp lightly with salt and pepper, then sear for 30 seconds per side.
- Wrap each shrimp with a half slice of precooked bacon. Secure with a toothpick or small skewer to hold shape.
- Combine honey, lime juice, lime zest, and chili flakes in a small bowl. Brush generously over the bacon-wrapped shrimp.
- Place shrimp under a broiler or on a hot grill for 2–3 minutes, turning once. The Great Lakes Gold High Oleic Vegetable Oil helps the bacon crisp without burning.
